Fun with Food Friday - Chicken Devan

Today you get two variations on a very similar dish! 
Lindsey Grimes sent me a recipe for a casserole which was almost identical except her's is basically the speedy version with more convenience-food ingredients!
So I'm gonna give you both and then show you how I put mine together!

Lindsey's Chicken, Broccoli & Cheese Casserole
  • 2 cups water
  • 2 cups uncooked instant rice
  • 2 (10 ounce) cans chunk chicken, drained
  • 1 (10.75oz) can condensed cream of mushroom soup
  • 1 (10.75oz) can condensed cream of chicken soup
  • 1/4 cup butter
  • 1 cup milk
  • 1 (16oz) package frozen chopped broccoli
  • 1 small white onion, chopped
  • 1 pound processed cheese food, (such as Velveeta)
1.) Preheat oven to 350 degrees.
2.) In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
3.) In a 9x13 baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
4.) Bake in the preheated oven for 30-35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.
This recipe is a great way to get your little munchkins to eat broccoli! :-)


Mama Chocolate's Chicken Devan

  • 4 cups cooked rice, (I usually use brown rice)
  • 3 cups cooked chicken, (this is about 3 breasts, see my Chicken Noodle Soup recipe for easy, moist preparation)
  • 3 cups fresh cut-up broccoli (or frozen works almost as well)
  • Make White Sauce using this amazingly easy microwave recipe (double it for use in this dish)
  • 3/4 cup mayo
  • 1 to 2 tsp curry powder
  • 1 Tb lemon juice
  • salt 
  • 1.5 cups grated cheddar cheese
  • 1/2 cup breadcrumbs
1.) Preheat oven to 350 degrees. Press rice into a 9x13 pan.

2.) Sprinkle the cooked chicken over the rice.

3.) If you are using fresh, (not frozen) broccoli, lightly steam it first. You want it to still have some crunch, since it'll be cooking again in the casserole.

4.) Spread the steamed broccoli over the rice and chicken.
(I think I went a little overkill here on the broccoli, but we all like broccoli here and I happened to have a lot on hand!)

5.) Take the white sauce you made using the amazing microwave recipe, (which I forgot to do!) and add mayo, lemon juice, salt and curry powder, (to your taste.)


I know I have enough curry powder for our tastes when it's about this color after stirring thoroughly





6.) Spread the sauce over the rice, chicken and broccoli

7.) When your eager toddler begs to "help?!" and drags a chair into the kitchen all by her little self, let her sprinkle the cheddar over the top

She will love you forever. ;-)

8.) Sprinkle the breadcrumbs on top.

9.) Bake for 45-60 minutes, until golden on top.

10.) Now that your little angel is no longer in her "liddle printhess dress" let her consume your creation.

If you are not a curry-lover, do not be alarmed by it's inclusion in this dish. This is not a "curry dish." 
It just gives the casserole a delicious deep flavor.


This is one of our favorite meals!

YUM! My chicken divan recipe is a mix between these two - it has soup, mayo & sour cream for the "sauce", plus the yummmmmmmy curry powder. But I've never used rice - mine is sometimes served over angelhair pasta but often we just serve it with crusty bread to soak up the sauce!! Love your blog - can't wait to check out more of it!
